- 600 gr langostinos enteros
- 1 cebolla
- 5 dientes ajo
- 1 puñado orejones
- 150 ml leche de coco
- 100 ml fumet de langostinos (que haremos con las cabezas de langostinos)

- Al mismo tiempo haremos un fumet sencillo, con las cabezas y peladuras de los langostinos, así que los pelamos, reservamos los cuerpos y colocamos una cacerola o sartén amplia al fuego con 2 dientes de ajo y un chorrito de aceite, dejamos que el ajo aromatice el aceite y echamos las peladuras y cabezas previamente enjuagadas.

- Ponemos un poco de sal, vamos aplastando las cabezas y cuando lleve unos 3 o 4 minutos ponemos 1 cucharadita de pimentón, removemos y echamos 2 vasos de agua. Se deja cocer unos 10 minutos, después se cuela y lo reservamos.


- En la misma sartén sofreímos la cebolla picada en brunoise – muy pequeña- ponemos un poco de sal y pimienta, cuando se vea dorada echamos los orejones y el curry, añadimos unos 100 ml de fumet, removemos e incorporamos la leche de coco. Cuando haya cocido un par de minutos incorporamos los langostinos que se harán muy pronto, apenas un par de minutos y estará listo.



- Ahora cocemos el arroz en agua con sal y cuando esté cocido lo rehogamos en una sartén con 1 diente de ajo. Aparte pasamos por la trituradora o picamos muy fino los 2 dientes de ajo que nos quedan y perejil para echárselo al arroz cuando esté cocido, se mezcla y ya tenemos el arroz.
